Making Apple Spice Cake using apple peels

When you make homemade applesauce, you know that you have a lot of leftover apple peels. So the question is, “What do I do with all of them?” You could throw them out, but that would be wasteful. Now I started this post a long time ago and set it aside because after we finished the recipe and tasted it, I would have to say that it turned out to be a disaster. There were so many things missing from the recipe, I just couldn’t publish this post. Now that I’ve thought about it for awhile, I’ve decided to go back to it and give it another shot. Include what we did wrong and then include what should have been included in recipe.

So what am I going after here…an Apple Spice Cake with a twist!

Ingredients:

Apple Peelings, 1 to 2 cups
Flour, 2 to 3 cups
Cinnamon, 1 tablespoon
Nutmeg, 1/2 teaspoon
Baking soda, 1 teaspoon
Salt, 1 teaspoon
Sugar, 1 to 2 cups
Eggs, 2-3 large
Vegetable Oil, 1 1/3 cups
Vanilla, 1 teaspoon
Assorted chopped nuts, 1 cup (optional)
Nonstick cooking spray with flour

Supplies:

Food processor
Mixer

Spatula
Cake pan, 13 x 9 inch or a bundt pan
 
Recipe:

Take your leftover apple peelings (we froze ours so they wouldn’t spoil) and put them into a food processor. I think my original problem with this step was that we used too many of the apple peelings. Blend. (Note: I would suggest that you use 1-2 cups of peelings instead of the whole bag that my husband dumped into the food processor!)

Using a mixing bowl, combine flour, cinnamon, nutmeg, baking soda and salt.

Add sugar, eggs, oil and vanilla.(Note: The original recipe was too dry. It needed so much more so I added a few things. My guy meant well, but it did not work his way!)

Combine the apple peelings with the rest of the mixture and blend until well mixed. Add optional nuts. (Note: We did not include this in the original recipe, but they might add a nice texture. For those with nut allergies, don’t add them!)

Using non stick cooking spray, grease and flour a 13 x 9 pan.  Preheat your oven to 350 degrees and insert the pan into the oven for 30-45 minutes. You will need to test after 30 minutes. Use a toothpick to test after 30 minutes as baking time will vary. If the kitchen starts to smell good, you’re on the right track! Ours was finished after 37 minutes.

Let cool and top with cream cheese frosting! Serve with vanilla ice cream.

Ok…so there you have it. I think this will taste a whole lot better and if it doesn’t, well I gave it my best second shot!

  2. This looks like a perfect recipe Susan, I like apple spice cakes. I've boiled apple peelings before to use in the sauce for baking apple dumplings.

    I think the aroma of cinnamon and apples baking is very special.
