Mini Blueberry Loaves/Muffins


For a nice change of pace to regular bread, we thought it would be nice to make blueberry muffins. My guy took it one step further and suggested making mini loaves. Brilliant! I just bought a new mini loaf pan and scrambled to find it. Meanwhile, this recipe was literally created on the spot! Enjoy!
  • Flour, 2 ½ cups
  • Sugar, 1½ cups sugar – 1 cup of white and ½ cup packed light brown sugar
  • Salt, 1 teaspoon
  • Baking powder, 2 tbsp (For those non-baking people, this is a mixture of baking soda and tartaric acid, otherwise known as cream of tartar.) 
  • Cinnamon, 1 ½ tablespoon
  • Ginger, 1 teaspoon
  • Nutmeg, ½ teaspoon
  • Allspice, 1 teaspoon
  • Eggs, 2 unbeaten
  • Canola Oil, 1 /4 cup
  • Vanilla, 1 teaspoon
  • Milk, 1 cup, fat free
  • Water, 1/3 cup
  • Frozen Wild Blueberries, ¾ cup (But you can add as much or as little you want.)
  • Cooking spray
Optional: pecans, ½ cup
Preheat oven to 325 degrees move the rack to the middle of the oven. Spray a light coat of cooking spray on the bottom of the mini loaf or muffin pan. No need to do so when using paper baking cups, but it is optional.
Take the dry ingredients and add to the mixing bowl. Blend. Add the wet ingredients and blend again. The batter should be relatively fluid, similar to a cake batter. Fold in the frozen blueberries by hand.
Fill sections of the mini loaf pan approximately 2/3 full. You should have enough batter to fill all eight sections of the pan and with leftover batter to fill approximately 4 sections of a large muffin pan. Wipe off any spills so you don’t get burn spills on the pans.
Bake for 35-45 minutes depending on your oven, pan and size of each loaf or muffin. Remember that smaller tins may require a shorter baking time, but it’s the amount of batter (volume) in each section that determines the actual baking time.
Be sure to check for doneness using a toothpick and look to see that the sides of the loaves/muffins are pulling away from the pan.
For fun, we actually calculated the cost of ingredients and determined that this little recipe cost less than $2.00 to make!
